Frozen Cucumber Pickles

Many years ago, my mom and Granny made "7 day Pickles". 
That aluminum foot tub stayed on our kitchen counter for, yep, 7 days! Every night they would drain it and put alum and something else on those cucumbers....well, friends.....have I got a recipe for you! This one is a keeper AND it only takes 2 hours! At the rate y’all eat ‘em here, 7 days just wouldn’t do!

FROZEN CUCUMBER PICKLES

Ingredients:
4 cups sliced cucumbers 
2 cups sliced onion
1 teaspoon salt
3 Tablespoons water

1/2 cup apple cider vinegar
1 cup sugar

Instructions: Put cucumbers, onions, salt and water in a glass or metal bowl and let it sit for 2 hours. 
Add apple cider vinegar and sugar, stir and freeze (you can put it in plastic bowl now). I usually get it out of the freezer the next day and keep in frig. They will last a long time, but not around here!
